A lighter but delicious vegan alternative to the regular pasta with white sauce. Use this white sauce with your sauté veggies or to make lasagna.

Ingredients: ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 3/4 of a medium-size head of cauliflower (about 3-4 cups), cut into pieces
  • 1 onion, chopped
  • 3 garlic cloves, halved
  • 1 cup of cashews
  • 1 1/4 cups of water
  • A pinch of turmeric
  • 1/8 teaspoon nutmeg
  • Salt and pepper to taste

For the noodles: 2 medium-size zucchinis.

Instructions: ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • Sauté the onion until it is almost translucent. 
  • Add the garlic and cauliflower, the spices, and cook for a minute stirring continuously.
  • Add water, mix everything well, and cook until the cauliflower florets can be easily cut in half with a wooden spoon (until they are very soft).
  • Transfer everything into a blender. Blend until smooth.
  • Spiralize the zucchinis into a large bowl. Remove excess water or moisture with a paper towel or clean cotton cloth. Transfer the noodles into a large pan.
  • Add the amount of sauce that you desire to the zucchini noodles, warm-up the noodles mixing everything very well, and until the desired temperature. Enjoy!
