This is delicious and very easy to create vegan cheese to satisfy your cheese craving.


  • 2 cups raw or dry-roasted (unsalted) macadamia nuts and/or marcona almonds
  • 2 teaspoons mixture of finely diced sage and rosemary
  • 1⁄4 cup of water
  • pinch of sea salt

Place the nuts, salt, and a few tablespoons of water into a high-speed blender or food processor. Blend on high until you have a creamy consistency.

Fold the herbs into the nut mixture. Then shape the mixture as desired. As you get comfortable with this recipe, you can experiment with herb combinations. Here are some options:

  1. Pack into a mold or bread pan lined with plastic wrap for easy removal. Serve upside down in a large rectangle or square.
  2. Roll into a log and then roll the log through minced herbs and spices of your choice.
  3. Pack into a container for easy serving and storing, as chèvre is often sold

Serve with gluten-free crackers, sliced vegetables, and a creamy dressing as crudités, gluten-free toast, or as a garnish for salads, stir-frys, and vegetable or brown rice pasta dishes. Serve with allowed foods if cleansing or doing a program.
